Back To School | Vegan Tuna Salad


Happy Sunday Too Good Family! I know we have said it before but we will say it again! Our philosophy is to put ingredients in our bodies that nourish! We believe that all meals should be rooted in health! For the month of August, we are sharing recipes for Back to School! Today we are sharing a lunch recipe that you can pack for your little ones! 

Today our recipe is what we like to call a lunch classic with a twist, Drum roll, please! Vegan Tuna Salad! You can either put it on a salad or have a side of crackers packed! 


  • 2 cans garbanzo beans (chickpeas)(3 cups) rinsed and drained
  • 2 Tablespoons mayonnaise (vegan)
  • 1 Tablespoon prepared yellow mustard
  • 2 Tablespoons sweet pickle relish
  • 1/2 cup celery chopped

Steps To Yumminess 

  1. In a medium bowl, add the garbanzo beans (chickpeas), vegan mayo, and mustard. Mash with a potato masher or the back of a fork until the bean mixture is partially smooth with some chucks. (Or use a food processor and the pulse function.)

  2. Add the rest of the ingredients to the bowl and mix until combined.

  3. Serve immediately or refrigerate until ready to serve.
