Roasted Quinoa Bowl | Too Good Lunch

Happy Sunday Too Good Family, 

Earlier this month, we started the #toogoodlunchbox series! Our goal was to highlight the many ways our chilled snack pouches are for all ages! 

One of the main dishes in the lunch box series was a roasted vegetable quinoa bowl (in a cute mason jar)! This recipe combined with our Carrot Mango Ginger chilled snack pouch is the perfect go-to for any lunch this week! 

Ingredients: 

  • Quinoa
  • Beets 
  • Carrots 
  • Broccoli
  • Really Any veggie you love!!
  • Olive Oil 
  • Seasonings 

 Steps to yumminess: 

step one: Preheat oven to 400 degrees! Chop all your toppings and put them on a cookie sheet. Drizzle Olive Oil & your choice of seasonings. Place in oven. 

step two: Cook the quiona according to the directions on the package. Once cooked drizzle olive oil, lemon juice, salt & pepper on the quiona!

step three: Combine the roasted veggies and quiona into a bowl or mason jar! The choice is yours!
