Today we wanted to share with you a delicious alternative to the average the pancake, Sweet Potatoe Pancakes. Oh my they are so yummy! This recipe is packed with healthy alternatives right down to sweet factor!

- 1 sweet potato (pureed or mashed)
- ½ cup flax seeds
- ¼ cup unbleached flour
- 1/8 teaspoon baking soda and baking powder
- 1 teaspoon of honey
- 1/8 teaspoon ground cinnamon
- a pinch of salt
- optional-milk of any kind to thin batter if necessary.

Step One: Mix all ingredients together in a mixing bowl well, make sure all sweet potato is mashed. The batter will be thick so spread it out when scooping the mix into the hot greased skillet.
Step Two: Cook pancakes like you would normal pancakes, so watch that they are cooked thoroughly but not burned.
